All else being equal, pizza cooked in a wood-fired brick oven is superior to pizza cooked any other way. By Hand Pizza Cafe uses Lam Yai wood to fire their traditional Italian domed brick oven. Whatever you do, try to do it right.

Don't call our pizza fast food. We naturally ferment our flour blend in several stages over several days. This transforms what is in essence raw ground up grass seeds into a wholesome nutritious dough bursting with flavor. Our Italian tomatoes come in glass to prevent leached chemicals and tin can taste. Instead of the commonly used "pizza topping" filled with palm oil we use 100% milk mozzarella and instead of soy , canola or pomace oil we only use extra virgin olive oil. Can I reserve a table?

No. We have a no reservation policy. Around 19:00 and 20:00 is the busiest time so if you want to avoid busyness it is best to come either early or late.

Do you deliver?

No. Delivery services charge restaurants around 35% of the sales price. So delivery food forces restaurants to use cheap ingredients, cheap labor and reduce portion sizes. We only serve quality.

Can I order and pick up?

Yes. You can call 0638828195 to order.

Do you have parking?

For motorbikes; yes. For cars; no. Sometimes there is car parking available on the public road behind Wat Lamchang Chiang Mai.

What are you doing to stop covid19?

We are trying to stop the psychosis

Do you have gluten free pizza?

No. Our wood fired oven is too hot to bake gluten free pizza. For more information about bread and gluten intolerance click here.

When does the kitchen close?

We accept orders until 10:00PM, the restaurant closes 10:30PM.

Can I pay with a credit card?

No. We prefer cash but also reluctantly accept prompt pay. We fear the day they manage to get the cashless society they want. Then there will be total control over what you say and what you do as a citizen. Without cash there is no free society.

What style of pizza do you make and what size?

The By Hand Pizza style is between Neapolitan and New York pizza, but closer to Neapolitan. Neapolitan bakes very hot in under two minutes and creates a very soft (floppy) pizza. New York style is thicker with more toppings and baked in 6 to 8 minutes to be more crispy. Our Chiang Mai style pizza is a hybrid between the two and baked in 4-5 minutes to get a nice balance between fluffy and crispy. The pizza is about 29 cm in diameter.
